The sweet milkmaid of early daysA
Her own household she ably swaysA
And her daughters now milk the cowsB
And her sons they now guide the plowsB

These pleasing changes on a farmC
Doth give to rural life a charmC
Let occupation none upbraidD
But honor plowman and milkmaidD
-
For Burns with glory did endowD
And wove a garland round the plowD
The source from which all wealth doth springE
And happiness to all doth bringE
-
Our muse it doth refuse to singE
Of cheese made early in the springE
When cows give milk from spring fodderF
You cannot make a good cheddarF
-
The quality is often vileG
Of cheese that is made in AprilH
Therefore we think for that reasonI
You should make later in the seasonI

Cheese making now you should delayJ
Until about the first of MayJ
Then cows do feed on grassy fieldD
And rich milk they abundant yieldD

Ontario cannot competeD
With the Northwest in raising wheatD
For cheaper there they it can growK
So price in future may be lowK
-
Though this a hardship it may seemL
Rejoice that you have got the creamL
In this land of milk and honeyM
Where dairy farmers do make moneyM
-
Utensils must be clean and sweetD
So cheese with first class can competeD
And daily polish up milk pansN
Take pains with vats and with milk cansN
-
And it is important matterF
To allow no stagnant waterF
But water from pure well or streamL
The cow must drink to give pure creamL
-
Canadian breeds 'tis best to pairO
With breeds from the shire of AyrP
They thrive on our Canadian feedD
And are for milking splendid breedD
-
Though 'gainst spring cheese some do mutterF
Yet spring milk also makes bad butterF
Then there doth arise the queryM
How utilize it in the dairyM
-
The milk it floats in great spring floodD
Though it is not so rich and goodD
Let us be thankful for this streamL
Of milk and also curds and creamL
-
All dairymen their highest aimsQ
Should be to make the vale of ThamesR
Where milk doth so abundant flowK
Dairyland of OntarioK
